Oh man, is it ever easy to make things taste good using bread and cheese. Especially cheese. It seems like all the covers of artfully designed cookbooks feature simple-looking recipes that you just know are absolutely delicious because of the presence of one magical food: cheese.

Muffins are exactly what I’ve been needing lately: soft, tender, sweet and loving, these pillow-y treats, with their oatmeal and chia seed content, are full of fibre and lemony-blueberry flavour. These babies are the perfect antidote to the long, dreary days spent in the library as my classmates and I head for the final stretch of the semester. Eat ’em up, we’re almost there!

First of all, let me thank Mark at Endless Love and Light for my 2nd Very Inspiring Blogger Award nomination. That makes 4 blog nominations! While I’m not exactly sure what these nominations really mean, I’m grateful for the recognition from the blogging community and appreciate the love that’s sent my way (every time someone hits “like” or leaves a comment, or even reads a post). It’s a wonderful feeling when someone shows that they’ve resonated with a post, picture or thought that you’ve shared and it serves as a great motivating factor to keep on blogging. So, thanks, Mark!

Just for the record, I don’t follow the Paleolithic diet, nor any diet for that matter. Not to a T, anyways. I enjoy eating legumes, I consume whole grains such as brown rice and quinoa, and I also enjoy eating root vegetables, most of which are eschewed on the Paleolithic, or primitive, diet. I know that many people feel great on the paleo diet, but at this stage in the game that is my personal health journey, it’s not for me. Maybe one day it will be, but not today.

Since the summer I’ve been obsessed with this particular salad. It consists of strawberries, a handful of almonds and baby spinach (or mixed greens) and is dressed with a simple vinaigrette of balsamic vinegar and olive oil.

For the next three weeks I’m house-sitting at my parents’, 1.5 hours away from the school. Not only are classes at CCNM long and tiresome, my commute time has also increased. I also have the added stress of having a small dog waiting for me when I get home. This makes finding the time to prepare something healthy to eat at night a challenge.
